Como pertenezco a esa raza de gente que conjuntan sus viajes con turismo gastronómico, ¿qué mejor manera de hacerlo sino con libros de recetas? Me llamó mucho la atención el libro de Enrique Becerra, tanto por sus recetas (¡y fotos!) que por las anécdotas que ese sibarita cuenta y ¿qué no va a contar un hijo, nieto, bisnieto y tataranieto de hosteleros, defensor de la cocina y las materias primas andaluzas, con trenta años de experiencia en su restaurante, (lo cual se a convertido en un verdadero local literario de Sevilla) amigo de famosos escritores como Arturo Pérez-Reverte, fiel cliente del sitio?
Ya hice sus recetas de Carrillada (carrillera), de cola de toro, sus Espinacas con garbanzos y su solomillo ibérico relleno de chorizo. Todavía tengo asuntos pendientes como su Bacalao gratinado con salsa de trigueros, sus Berberechos al vapor con aceite,… Y al comer cada plato, me apetece un poco más conocer Sevilla y Enrique…

También aprendemos un montón de información sobre la cultura culinaria y los hábitos gastronómicos de esos tiempos. El libro ofrece la versión latina original, una traducción literal y una interpretación fiel al espíritu antiguo para que podamos “preparar platos similares a los que aparecían en las mesas de los patricios y los emperadores romanos en los siglos más esplendidos del Imperio”! Preciso que las recetas son asequibles y que no hace falta ser profesional para prepararlas y que luce con magníficas ilustraciones de Serena Papazzi, realizadas a partir de mosaicos y frescos romanos. En fin, cualquier persona que tiene algo de curiosidad sobre el origen de la gastronomía debe adquirir este libro. &lt;div&gt;

Hay tantas variedades que no fueron pocas veces las que me junté en Francia con amigos para una cena de quesos, solo acompañados con pan, ensalada y, por supuesto, buen vino.
Aquí en Asturias, descubro cada poco un nuevo queso, que sea en el mercado, en ferias, restaurantes o porque algún amigo me lo hace descubrir. Pero cocinarlos, es algo que no se suele hacer tanto. Así que cuando descubrí un libro de recetas de quesos asturianos, en seguida me interesó. Y tengo que confesar lo bueno que es este libro: tanto por la información que da cerca de los quesos asturianos que por las recetas, originales y ricas, y por las fotos que acompañan cada receta. No os perdáis las tostas &lt;em&gt;de pan de escanda con Cabrales y sidra&lt;/em&gt;, ni los &lt;em&gt;croquetones de jamón de Tineo y queso Monje Picón&lt;/em&gt;, ni el hojaldre &lt;em&gt;de pimientos y Varé de cabra&lt;/em&gt;… Ya probé algunas recetas como los pinchos &lt;em&gt;de cecina con queso de oveja y “reineta” caramelizada a la plancha&lt;/em&gt;: algo que tiene mucho éxito a la hora de proponer unas tapinas calientes de ultima hora (&lt;a href="http://lacocinadeoscar.blogspot.com/2007/02/cuarenta-quesos-cuarenta-platos-los.html"&gt;&lt;span style="color:#000099;"&gt;http://lacocinadeoscar.blogspot.com/2007/02/cuarenta-quesos-cuarenta-platos-los.html&lt;/span&gt;&lt;/a&gt;)!

Aquí os propongo una tan original como rápida y fácil de preparar para haceros la boca agua.
Envolver tacos de &lt;strong&gt;queso Ovín de oveja&lt;/strong&gt; en unas lonchas de &lt;strong&gt;cecina de vacuno&lt;/strong&gt;. Pelar, descorazonar y cortar en tacos del mismo tamaño una &lt;strong&gt;manzana “reineta” grande&lt;/strong&gt;. En una plancha o sartén caliente, verter un poco de &lt;strong&gt;azúcar&lt;/strong&gt; colocar los tacos de manzana y dejar colorar hasta que se caramelice por todos los lados. Colocarles en cima de los tacos de queso envueltos en la cecina y pincharles con un &lt;strong&gt;palillo&lt;/strong&gt;. &lt;ul&gt;&lt;li&gt;Enceder el horno à 200° C. &lt;/li&gt;&lt;li&gt;Mezclar &lt;strong&gt;unas gotas de&lt;/strong&gt; &lt;strong&gt;vanilla liquida&lt;/strong&gt; o&lt;strong&gt; de&lt;/strong&gt; &lt;strong&gt;almendra amarga&lt;/strong&gt; con &lt;strong&gt;2 cucharadas de ron&lt;/strong&gt; (opcional), &lt;strong&gt;125 g de almendras en polvo&lt;/strong&gt;, &lt;strong&gt;75 g de azúcar&lt;/strong&gt;, &lt;strong&gt;2 huevos&lt;/strong&gt; y &lt;strong&gt;50 g mantequilla&lt;/strong&gt; blanda.&lt;/li&gt;&lt;li&gt;Colocar &lt;strong&gt;1 disco de hojaldre&lt;/strong&gt; en la bandeja del horno. En el medio, repartimos la masa de almendra sin alcanzar los bordes que mojaremos con un poco de agua. &lt;/li&gt;&lt;li&gt;Esconder una alubia (o una sorpresa que no funda) en la masa.
